Chickpea salad with bergamot dressing  For the dressing, combine 1 tbsp mustard, 1 tbsp Erbology Organic Chia Oil, ÂŒ tsp pinch of sea salt, 2 tbsp Erbology Organic Bergamot Juice and 2 tbsp water. In a large bowl, mash 1 cup cooked chickpeas. Add Âœ chopped avocado, Âœ cup corn, ÂŒ cup diced red onion, ÂŒ cup chopped parsley and 1 tbsp sliced sushi nori. Pour the dressing and mix well. Serve on rice cake or bread and garnish with fresh parsley leaves. It’s so good!
